As a student, I love reading blogs with student advice and tips, and recipes are always greatly appreciated! I had a go at making my own curry back at home and since making it I've found it incredibly easy and cheap and only uses one pan, which is always great in a house of 4 girls who hate washing up!
I used 1 can of chopped tomatoes, 1 can of chickpeas, 1 can of coconut milk, 1 red onion, a pack of butternut squash and sweet potato (you can add or substitute for any kind of meat or vegetables you prefer). I also added a touch of garlic, black pepper, curry powder and cinnamon.
First I fried the onion in a bit of oil, added the herbs and spices before adding the drained (and washed) chickpeas and fried for a few minutes.
Then I added the chopped tomatoes and cooked for a few minutes again.
Then I added the coconut milk and then added the sweet potato and butternut squash (ready washed and chopped) until I could easily stick a fork into the potato/squash.
Then just cook a bit of rice or potato and serve!
Yum, this isn't really a hot curry, If you prefer the spicy kind you could probably add more curry powder or chillis or something.
